Renovation Diary
If you’ve gone past the corner of Grand and Ogden lately, you might have noticed a whole bunch of folks coming in and out and working quite diligently to fix up our new space. The transformation is in full swing and while we are still very much in the "dirty work" phase of our renovation, we are about to turn the corner from taking things apart to putting them back together!
Getting Things Done
It’s a great feeling to see milestones checked off the list! We’ve recently completed a bunch of essential repairs and have shined up our kitchen appliances - including the ovens, stoves, and fryers - until they look like new. The kitchen’s hood and fire suppression systems have also been checked out.
One major achievement this week was finishing the installation of our new fire alarm. To be clear for our local supporters: this is a safety device for the building, not a celebratory siren for when the Chicago Fire score (though we might have to look into adding one of those, too)!
Much of the work so far has been the unglamorous kind that doesn’t make for a perfect Instagram photo. However, it’s these behind-the-scenes details that will ensure everything runs smoothly when you’re settled in for 90+ minutes each week.
What does make for a great photo is our new lighting and paint. We have begun installing a variety of new fixtures, and our painters are scheduled to give the entire space a fresh, clean look. Spoiler alert: The interior color palette will closely match what you see on our website.
Staffing Up
We are officially looking for a Kitchen Manager, Bartenders, and Baristas. We are seeking individuals who can lead a back-of-house team with professionalism in a fast-paced environment, or deliver precise, welcoming bar and/or cafe service with strong hospitality instincts. If you or someone you know fits the bill, please apply via Culinary Agents.
What’s Still To Be Done?
While we’ve made progress, there is still plenty to do. Some things next up on the list:
Tidying up the bathrooms.
Replacing a broken pane of glass on the rooftop.
Completing the installation of the remaining lighting fixtures.
Getting the beer lines squeaky clean
Installing the new espresso machine (!!)
And a whole lot more!
